Steve's recommendation of Mt Major is a good one, but from Moultonboro you will be much closer to two other excellent hikes. Rattlesnake Mtn in Holderness has the best views for the least effort in the state. http://www.hikenewengland.com/RattlesnakeWestGen1.html

Also look for Red Hill, a little more strenuous but super views of the lakes.

The Presi Traverse in a day is great, but try to be flexible and choose the right day. Plenty of places to bail and enough traffic that you shouldn't get in any trouble.

My alpine cairn experiences include crawling from one to the next on hands and knees, using front points and both tools to advance against the wind. I also stumbled, by chance/intuition/divine intervention, into the cairn at Thunderstorm Junction following a three mile hike in a January white-out. The cairn is maybe 8' tall and proportionally wide, yet I couldn't see it from 8' away.

As for the climbing. We will be looking for easy to moderate stuff. Seems like something similar to the Upper Cliff in Pawtuckaway would be perfect for us. Trad and Top Rope friendly with stuff down to 5.6; things good for my wife and relatives who don't climb to warm up on. My TR upper limit is in the 5.10's and it seems areas dominated with 5.11-.12 are only areas to screw myself up on.

There are many great cliffs in the state but given your interests as stated above, I think Rumney (on a weekday) might be your best bet. The Parking Lot Wall is straightforward with a 1-minute approach. You'd have to lead most routes before toproping but they're all sport bolted, even down to 5.4.

The Meadows are adjacent, with many additional routes.

Larger crags like Cathedral, Whitehorse and Cannon have some short climbs at their base, but their draw is the multipitch classics. There are many less famous cliffs throughout the White Mountains, but not a wealth of high-quality easy routes, and the adventure level goes up as you get off the high-traffic climbs.
