...I didn't notice the first part was a year and a half old...
Here is "Mrs' Mar- - -'s (my mom's) recipe, with adaptation I have made. I just did this earlier today, and I am SURE it is BETTER than the "best ESS"
Here's the recipe(will make 2 sandwiches, unless you....put more of the Es on your bread....)
Hardboil 2 eggs. People will have different techniques, but the way I do it is, I put the eggs in a pot and add enough water to cover by a small amount. Put it on the stove, bring it to a boil, and boild gently for 12-15 minutes.
Run the eggs under cold water, or refrigerate till cold.
Chop and add the eggs last....
First, stick some mayonnaise in a bowl that is big enough for you to stir the mixture. A cereal bowl would be too small. The amount of mayo is taste dependant, but better to go small, as you can always add more if needed. To me...too much mayo is gr-r-r-r-oss.
Dice a little onion, again, amount depends on your taste and the onion's essential "onioness."
Add some salt(course sea salt....mmmmm)
Add some pepper(freshly ground bouquet of peppercorn varieties...mmmm)
Add a very small amount of mustard(Mrs. Terrie's mom and I use the powdered spice, but some "modern" people may be unaware that mustard exists in this form....use what you got, and be proud to be individual).
Dice a third of a stalk of celery, if you have it. Add some celery salt, otherwise. Or both.
No Secret, important ingredient - Paprika. Wonderful exotic, gift from the far east Paprika..... Sprinkle some in.
Now mix that stuff up.
Chop up the eggs, not too big, not too small. Juuuuust right.
Best to put in the fridge and let the ingredients meld. This is why my recipe makes TWO sandwiches - so you can have one at once(because you know you will) and one later on, when the ingredients have blended harmoniously....
Put the salad on a GOOD bread(I cannot be held responsible for disappointment if crappy white bread is used, though I am sure there is a school that will insist ESS MUST be on crappy white, and only crappy white, bread).
Garnish the sandwith with a few leaves of good lettuce(no...iceberg is not good, unless you gew it yourself or have access to a farmer's garden that did. Dole lettuce from the A & P...well, okay, use it if you have no options).
If you have some good tomatoes, a nice thinkly sliced one will make this sandwich even better....

Finally! A thread about sammiches and condiments. Egg salad easily ranks in the top 3 besides a Reuben and a juicy gourmet cheeseburger.

You forgot the diced cucumber for crunchiness (add right before pasting the mixture onto the lightly toasted sour rye) and the chili peppers (preferably Serranos, added early on so they can spread their goodness while the mess ages in the fridge). A few dill seeds won’t hurt.
Using anything but powdered mustard is pathetic.

Yum...egg salad sammy. Sometimes I make mine with curry powder, sour cream, bit-o mayo, salt& pepper.. top with a pinch of paprika. n.t.

egg salad, my second favorite kind of sandwich.
nothing beats a roast beef sandwich..from the roast you cooked the night before. lots of mayo, pepper, salt, a bit of lettuce and red onion on a french loaf.

You know there's some steamed duck-egg bidness happnin' up hibachi-ways, be it wasabi or yellow hot mustard, they both come powdered for the anti-vinegar crowd.
Me mahself, sez ain't nothin' like a huevo ranchero con chile rojo estilo nuevo mexico hecho en casa, since I can get that done in about cinco minutos and y'all mofos got me tan hongry I aints gwine atardecerme with the bilin'. Pinche' nancies. Got nah dam bred nohow. Tortilla blanca. Otra cerveza.

Donny - while touring the Eastside we stopped at Schat's Bakery where my girlfriend had one of their Egg Salad Sammich's. She said it was good. I made a hummus wrap with veggies and organic shrimp instead.

I oft select the ESS when I am at one of the six or seven hundred Lee's locations in downtown SF. It's about $2.35 and takes between 3 to 5 seconds for them to make.
