Question:if you are the lead, how well organized (or what method of organization) would you like the second to bring you the pro when they get to the belay.
Or
when you second how well do you organize the gear as you go ?

The second should be able to do whatever he or she wants. I try to stay as organized as is humanly possible. With that said, sometimes the going gets tough and the rack gets messy while following.

Keep the rack clean. It allows efficiency of movement and promotes more climbing throughout the day or safety through speed on a long route. There are exceptions at the crux, but for the most part, the follower should be actively helping get the gear back to the lead climber quickly and that starts with how it is removed from the rock.

Swinging leads, I organize gear [within reason] as I clean.
It'll be my rack for a lead in a few minutes anyways.

As Josh said, it helps keep things moving.

+1 on DMT although I normally just took a hand off from the second. I also had all my cams (sans Aliens) sent off to Yates for a color coded small quick draw sewn on. My Valley rack was racked from smallest to largest with a few very small nuts on a waist loop. Here is a shot of the color coding of the gear I primarily used for free climbing bitd.
