Somebody showed me this and thought this might be of interest, what with all the sushifests.

I like the idea of eating local, and the chef sitting across the table from you and telling you what to do and eat. Very much like being at somebodies house, proud of what they have cooked (as they should).

That is so funny.
Probably half, or more, of the sushi places in the east are Chinese owned and managed and many don't even have Japanese speaking chefs.

There are some good (in the sense the op is talking about) sushi joints in Seattle. Sit at the bar, yak with chefs, take whatever they feel like feeding you...

Yamatani's in Bishop can be like that, Robbie is a true host and a pleasure to eat sushi with.
Reminds me, I need a sushi fix.
