I'm about to follow the Bob Dylan plan and go on the endless tour. I'm a pretty lousy cook "Who knew Toast had bones"--R. Dangerfield.
My meals usually don't stray far from eggs, onions and spuds. I'm looking for simple meals that are cheap and are easy to make in camp--any suggestions? Any recipes will always be attributed to the author--Fame and fortune are sure to follow

I am the worst. I actually bought a #10 can of Mountain House, split it up into single serving portions zip lock bags and ate the same thing every night for 7 days in a row. It is not a f%*king picnic!

Making a predawn breakfast with my spouse. Not knowing he planned to make hot chocolate first, i stired cream of wheat into the hot chocolate. Super light weight and gooood.

Do like Kurt Diemberger - polenta. He was too poor to make it other than basically.

I buy the refried beans that come in pouch, dehydrated, so I can use just the amount I need. The canned kind is too much for one person, but...if you can only find the canned kind, you can use the leftover for breakfast.


So: "Burroto in a Bowl

Start cooking the dried refried beans, and while that is going, chop onions, tomato, avocado and chedder cheese.

Then, tear up several tortillas into bte sized bits. Put some butter in a frying pan and saute the tortilla,basically making warmed up corn chips. Or you can buy a bag of corn chips and just add them without heating up.

Take your bowl and put the chips in. Then put the cooked refried beans on top. Then put the cheese on- the heat from the beans melts it, which makes it yummy. Then, put the onion, avocado and tomato on top and, ready to eat! aybe you like it spicy - then put on some hot sauce. I also add dried cilantro, chili powder and a dash of salt to the beans while cooking, to add flavor.


For breakfast - saute the tortillas in the same way - remove from frying pan and put in the left over beans and heat up. When warm, move to one side of the pan, crack an egg or two and fry it. If you ave left over cheese and onion, tomato, you ca put that on top of the beans and tortillas.

If you don't have any left over beans, just saute the tortilla pieces along with onion and tomato. Instead of fried eggs, pour in the eggs as scrambled egg mixture, atop the warm tortillas and let cook like an omelette.

1oz vodka
1oz gin
1oz rum
3/4 oz tequila (little less than normal to quell the bite)
1oz triple sec
Liquor should be white over dark
1 1/2-2oz sweet and sour or something similar (this is where one can take liberties due to camping environment)
Splash of coke
Slice of lemon or lime

Repeat until night is over

Next morning, who cares what you climb, but climb you must.

For car camping get a small, portable propane Weber Grill....everything you cook will be wonderfull.
Try...
Panko crusted cod fillets
Basil pesto salmon fillets
Garlic infused bison burgers
Those were the main dishes for the last three nights in Indian Creek
Entrees were accompanied by fried polenta and mushrooms or instant garlic mashed potatoes
For car camping try the chopped salad kits....the asian one is the best
Bottom line....you should eat as well car camping as you do at home

My entry is pretty simple:
1.Saute onions
2.mix and melt with swiss cheese
3.add over scrambled eggs

Get those cans of chicken that look like tuna, taco seasoning, beans, tortillas, cheese & salsa. Heat the chicken up in a lil oil, add the taco seasoning, and pour in some drained beans. When that's good and warm put cheese on top, then heat up a tortilla and put the chicken/cheese/bean mix on your tortilla, add salsa too taste.

If you want to get fancy then you can add lettuce and avocado.

For breakfast I like oatmeal, boil raisins or dried cranberries, or any other small pieces of dried fruit, plus a bunch of syrup too taste.

Speaking of syrup; I love pancakes, as long as you have a decent method for cleaning your dishes.

Burgers taste good in a frying pan or on a gas grill, brats are good, but boil them first!

Most of the full time climbers I know eat a sh#t-ton of quinoa that they cook a big batch of every week and eat with stir fried veggies.

Get a fly rod and license and you can be eating fresh fish while having a fun rest day activity.
