Consider Cayman Brac!
A British Territory, the three Cayman Islands are English speaking, have first-class medical care, and safe food and water. Cayman Brac, one of the small islands, is about 12 miles long and a mile wide. It has a population of about 1500 people (the size of my high school), no traffic lights, no stress and essentially zero crime.
Cayman Brac is the only climbing area in the Caribbean that has all titanium bolts, so you don't have to worry about them breaking!

Climbing AND fishing....think Patagonia. Having said that, there's nothing quite like hooking into a Dorado or a Wahoo.....and damn if they aren't good eating!

Grand Cayman is my favorite snorkeling destination out of the limited experience I have (Jamaica, Grand Cayman, Hawaii, Oahu, Maui, Sicily, Catalina Island in SoCal).
Climbing plus Cayman snorkeling would make for a cool trip.

Lord Slime, I remember you digging into this place back in the old rec.climbing days. Glad to hear you're still getting out there and making it happen.
Looks like a winter heaven to me--and not as far as that James Bond set (although from Cali, you still gotta fly to Miami!).
