hey there say, footloose, yes, elderberry, they are good to eat... the black ones...
(out east, there is red ones.. they can make you sick)...
you can also eat the black, raw or baked in foods...
and you can cook the blossoms, as well...

Snarkys comments are spot on. I've been eating them by the pound for years and never got the least bit sick.
Like everyone's been saying. The ripeness plays a huge factor. If they are not totally ripe, besides tasting like crap, they can turn your stomach a bit. Squeeze em' they should be deep red to purple. Check every cluster, you can have berries of varying ripeness growing next to each other on the same tree. The wood from the elderberry makes excellent flutes and pipes too. Being easily hollowed out and all. Grind the white flowers into a flower substitute or add them to salads as well.
Here's a great site for all your wild edible needs. The videos are especially entertaining.

The Acorns are starting to drop down here in the foothills. Never tried Acorn flour? Give it a go, it's like a really sweet almond.

hey there say, salamanizer...
say, i have used acorns... i grind them up...
i followed the boil them first type thing, directions, so that
they were not 'harmful' ... some trees here, only drop acorns,
(forgot?? every other year, i think it was)??
this year, some did not get them, and i missed last year, but,
i use them sparingly, in a heavy bread...
:)
i tried to find an elderberry tree ,but could not, as to planting, and
back out east here, i can't seem to find them... (my mom told me about both the black/purpled colored elderberry--that her dad taught her to eat--and about the red-colored one that was not good to eat... but these were both in ohio)... michigan, it says, has some... but i never seen them...
finally had to just buy a bush-type-tree... it says it gets the berries, but each two years, so far, the BERRIES FALL OFF before ever growing, :(
i get lovely blossoms, and take a few to fry in egg... however, i reckon now, i most likely will be frying ALL the blossoms, since i get no lovely fruit...
sure miss the elderberries of san jose... my mom and picked a lot, when we found them, as, no one else seemed to care to do so... :)
my precious memories, for sure... :)
