Can't really think of any. Is there a Bastille Crack or 3rd Flat Iron on the Western Solpe or in Utah?

Yes 100's, but you will have to hike a bit more then what it takes to get to the Bastille.

I totally agree with Wham Ridge, if you're looking for some 5.8 fun that's not alpine, these two have both adventure and fun.

Curecanti Needle, 5 pitches - 5.8 (mostly low 5th class)

Spring Creek Tower, 4 pitches - 5.8 (mostly 5.6)

1,000 Pints of Lite, Snow Creek Canyon, for starters. Several excellent routes there meet your criteria.

Lots of routes in Little and Big Cottonwoods like this. Route of All Evil in Bells Canyon.

mule hollow wall or the west slabs of olympus are good versions of the kind of climbing you find on the third.

Just curious mostly. I have climbed a fair bit in the moab area, but most of what you hear about is in the 5.10 and up range. Never climbed in the salt lake area and have done Otto's but isn't that 5.9. Mostly just always looking for classic stuff to do with my son.

Epinephrine is just over the border. Simply one of the greatest routes around.
