Anyone have a good recipe for a sherpa type flat bread?

I really enjoy flat breads, but my wife of 50 years and I have some food sensitivity issues. I seem to react to wheat and dairy with congestion and "belly bloat". I suspect GMO wheat is a problem, but that's difficult to prove.

Anyone know of a European/Asian source for non-GMO wheat? I've heard many travelers can eat foods in Europe that they cannot eat in the US.

We've tried the nut flours (almond, etc.), but they are not the same.

Thanks for your experiences and any input!

I have been researching this a little. Here are some links that I found. I don't have an answer for myself yet. Just looking into it after hearing Moose say that he could eat bread in europe.

Most large cities on the west coast (and maybe elsewhere) have stores that carry non-GMO food. I don't have any digestive problems -- could probably survive nicely on a diet of old car tires and industrial waste -- but I have long tried to support food producers who are doing it right. Organic, non GMO, whatever.

So take a look around and you just might find what you need right there in Sandy Eggo.

the NOLS cookbook had this very simple recipe... I used it on a couple of long Canadian Rockies trips, easier to pack flour. One of my good partners Mike said that these chappaties were a good excuse to eat butter...

Chappaties (makes 4 5" flat breads)

1/2 cup flour (whole wheat is more authentic, white is ok too)
1/2 cup cornmeal
1/2 cup water
pinch of salt
margarine for frying

Mix all the ingredients except margarine. Form into very thin patties and fry in lightly greased pan until golden brown.

variation: Combine 1 cup whole wheat flour, 1 Tbs. margarine, 1/4 tsp. salt, 1/4 cup of water. Proceed as for making Chappaties.

I think there are endless variations around this simple recipe.

As for flour, I'm sure there are many different breeds of wheat (human breeding is a form of genetic modification that takes longer than the laboratory form) and that European breeds may be different in important ways from those common in the US.

You can Google this online "US vs European wheat"

Chappati flour is generally "soft wheat" variety, you can probably pick it up at a local grocery specializing in South Asian foods.

Atta flour comes up on the Google search.

There is so much hype about gluten sensitivity, that makes so many people not want to eat bread. i think, unless you are in the 1% of people with celiac disease, or be one of the few rare individuals with a protein allergy, then what you could have is what is called a nocebo. This is like a reverse case of a placebo effect. This can be just as powerful as a placebo effect.

I notice the difference between the store bought bread and the bread Debbie makes at home... the home bread is very simple and uses sour-dough starter and unbleached, high quality flour...

I'm not allergic to the store bought, I greatly prefer the home made.

hey there say...


i make something very similar to Chappaties,

i just use only this though:

flour and a bit of salt...
(any flour of choice) ...

add bits of very warm water, until you have mixed up a
sticky dough... and i knead it with more flour until
easy to roll...


i roll it out, like tortilla...
and, throw it on a medium HOT gridal...

and let it cook until as 'cooked or toasted' as i like it



very very simple... no recipe, etc...
very vast...

but-- you must use them fresh, as, with NO OIL etc, in it,
it will be very hard, by the end of the day...


they work really great for using as a taco, as, a 'food wiper upper'

i never eat bread from stores... i make these,
or a few simple baked breads... :)



edit: me too, ed... prefer these so much more...

I have sworn off posting nonsense on the Internet, but I must correct two misunderstandings..

First of all, there is no commercially available GMO wheat. The protein content (gluten) of some wheat varieties has been increased by the process of selective breeding. (Unless you are a hunter-gatherer, all the food you eat has been subjected to selective breeding)

Secondly, the symptoms some people experience after eating some wheat products are probably caused by certain carbohydrates:

I don't want to diminish the seriousness of celiac disease, but that only affects a small portion of the population....

I'm just saying that facts are important.

Read up on what Royal Navy sailors lived on for years at sea. Aside from the pernicious
rum they did very well on wheat crackers, salted beef, and lime juice.

store bought bread, is the dough conditions...

(well, whatever it is that makes it smash in to a FLAT PIECE
of 'stuff' if you 'press on it' ... :O

and, others that might have a lot of sodium...

but, really, i just LOVE home made, off the fire, or,
out of the oven, :)

Take a look at a place called Grist and Toll in Pasadena. A friend turned me onto it. Not such a bad drive for a day trip excursion from San Diego.

Lactose intolerance tends to increase with age, so that might be a major contributer to the bloating, gas, etc. have you tried using the lactase products (tabs, drops) before eating dairy?

Although it's fun to go see the wood-and-stone mill in Pasadena, you can order online from Grist & Toll. The postage isn't cheap. Don't hesitate to call them first and discuss your bread and get their recommendations about what variety to use. And don't forget to order some of their cornmeal or polenta, which are freshly ground and taste like it.

I've heard from more than one person that they have fewer adverse health consequences from these "heirloom" wheat varieties than from commonly available flours.
